Does anyone have a preferred application for the conversion of a Pantone (Lab) color to CMYK? Is there any program, other than Photoshop, Illustrator, Indesign, out there that can do a better conversion?

Try Colorshop sold throughout XRite dealers. It will give you many color tools including one to get CMYK values from PMS or any scanned color in LAB values, and you will select the exact CMYK model from your ICC profile library.

GMG users can use the GMG SpotColorEditor of their proof or color conversion software by selecting the press color space as gamut with IRIS calculation mode and this quickly calculates any manually measured color value or tint or Pantone spot color into the CMYK color space of that print standard.
