new to this board. I'm looking for a way to find the CED for Xerox X700. Do these differ by regions and where would I find this?

I think the CED is the same worldwide, but it is regularly updated. Your Xerox rep (direct or authorised reseller) will give this to you on request. If you don't ask for it (they won't volunteer it!) then you will see it on the day of the installation when Xerox will ask you to sign it.

So I will only get to see the CED on the day of the installation (that would be bad)?

no, you just need to ask yor sales rep for a copy, there should be no problem with that.
